Nachos

Today I will be giving you a recipe on nachos. They are not your everyday boring cheese and chips nachos, but a lot more.


Ingredients:

1 bag of tortilla chips
1 medium can re fried beans
1 small can green chilis
1 medium can enchilada sauce
1 jalepeno pepper
2 cups sour cream
2 cups salsa
2 cups cheese
 


Directions:

1. place your tortilla chips on a microwaveable dish. sprinkle on 2 cups of cheese. Microwave for two minutes on high.
2. While the nacho chips are cooking, put the re fried beans, green chilis and the enchilada sauce in a microwaveable bowl.
3. Cut your jalepeno pepper into 20 slices. Put sour cream and salsa into small bowls and put to the side.
4. Take your the re fried bean mixture out and put in a serving bowl. Take the nacho chips and put on a serving dish.


                                                      serves 8

Spinach Pasta Salad

I had just made this today and everyone loved it. Today we used ditalini, but gemelli is our favorite.

Ingredients:

8 oz. frozen spinach
1/2 lb. pasta
1t balsamic vinegar
3/4 cup olive oil
salt
pepper
garlic powder

Other items for pasta salad: sun-dried tomatoes, cherry tomatoes, frozen corn, broccoli


Directions:

1. Microwave the frozen spinach for two minutes on high. While the spinach is being microwaved, drizzle one fourth of the olive oil on a pan and put the stove on medium heat.
2. Move the spinach to the pan and saute. Season with salt, pepper, and garlic powder.
3. Bring 3qt. of water to a boil.
4. Put pasta in the boiling water and turn down heat. ( the pasta is best al dente)
5. Drain pasta and freeze for ten minutes.
6. Shock the spinach.
7. Combine pasta and spinach.
8. Take 3/4 of the olive oil, 1t of balsamic vinegar, salt, pepper, and garlic powder and combine.
9. Drizzle over pasta and spinach.

Soda Float

My family's loved this for a while. Even though it's not the healthiest thing, they all love it:

Chocolate cream  soda ingredients:

1/4 cup chocolate syrup
1/2 cup seltzer water
1/3 cup vanilla ice cream


Directions:

1. Pour chocolate syrup into a tall glass. Pour the seltzer water into the glass. Stir in ice cream. Serve right away.

Cocoa Fruit Tarts

Here's a family favorite. Cocoa Fruit Tarts:

Ingredients:
1 large banana, 2 kiwi, and a cup of large blueberries.
4 large chocolate cookies
1/4 cup light cream cheese with strawberry or chocolate flavoring

Directions:

1. cut the fruit into quarter-inch cubes
2. spread the chocolate cookie with the cream cheese.
3. top with fruit. serve immediately

         serves 4

Beans & Salsa dip

This has been my family's favorite for a while. I have been making it since I was five:


Ingredients 

 1 16 oz. can refried beans
1 cup mild salsa
1 cup shredded cheddar cheese

Some other optional items:
shredded cheddar cheese, salsa, shredded lettuce, sour cream, tortilla chips

Instructions:
1. put beans, salsa, and cheese in a saucepan and stir. Put stove on medium heat and cook until cheese melts. Sir occasionally.
2. spoon mixture into a nine inch pie plate or shallow dish. top with extra cheese, salsa, lettuce and sour cream. Serve with tortilla chips.
